Ingredients:
1 big ol' head of cauliflower, chopped into "wing size" florets
Oil for brushing the grill (I use sunflower oil - canola will work well too)
Whisk up some sauce (or just use your favorite BBQ sauce):
1 cup ketchup
1/4 cup dijon mustard 1/4 cup apple cider vinegar 1/4 cup sugar
1 tbsp maple syrup 1 tsp fresh ground black pepper
1 tsp salt
1 tsp smoked paprika 1 tsp onion powder 1 tsp lemon juice 1 tsp coconut aminos (or tamari if you can have soy)
Directions:
Using a gallon zip bag or large container, marinate the the cauliflower in 2/3 of the BBQ sauce for about an hour - make sure to shake the bag around a few times so everything is nicely coated
Tip: If you're going to a BBQ, just use all the sauce and take it in the bag!
Heat the grill on medium (about 400°) (direct heat if you're using charcoal)
Once your grill is nice and hot, season (oil) the grates so your wings won't stick
Grill wings for a total of 10-15 minutes or until they have a nice char, brushing with the remaining sauce every few minutes, and turning as needed
Serve with grilled celery sticks
CHOMP CHOMP
Vicious Variations:
Cut the cauliflower into thick steaks for a heartier dish - follow the same directions & serve with mashed taters!
Sub your fav marinade or buffalo sauce in place of the BBQ for a different flava all together
