Vegan? No? That's ok, this recipe will still change your life.

1/2 cup cashews or cashew pieces (pre-soak if you don't have a fancy blender)
1 gold or russet potato
1 half white or yellow onion
1 Tbsp nutritional yeast (aka magic cheese dust)
1 tsp (or more to taste) salt
1/2 tsp smoked paprika
1/2 to 1 cup water (use the cooking liquid you'll have already)
Bring a large pot of water to a boil (throw in a couple pinches of salt for extra flava)
Chop your potato and carrot into large ugly chunks and add them along with the half onion to the pot of boiling water
Boil until fork tender
Throw the veggies, cashews, salt, paprika, magic cheese dust, and cooking liquid in your vitamix / food processor / blender
If you want a thinner sauce, add more cooking liquid
Sub a parsnip for carrot to make a white chedda.
Make a killer mac & cheese, top veggies, add to your fav soup, dunk pretzels in it, or just eat it with a spoon - I won't judge
