Killer Calzones


Finding money in your pocket is great, but finding pizza toppings in your pocket is way better.

GF. V. SF.


Ingredients:

Dough:

1 tbsp sugar

1 cup warm water (105°F - 110°F)

1 tbsp active dry yeast

2 cups GF AP flour (I use Pamela's Artisan Blend)

2 tbsp olive oil

1 tsp salt

Filling:

Veggies (I used green peppers, sun dried tomatoes, and morel mushrooms)

Vegan cheese (I used Miyoko's Creamery Fresh VeganMozz)

Seasonings & herbs (I used Frontier Organic Pizza Seasoning & fresh flat leaf parsley)

Tip: Do not fill your calzone with sauce - save it for dunking!

Brushing & sprinkling:

Olive oil

Vegan parm or salt

Pizza or Italian seasoning

Dunking:

Sauce! (marinara, ranch, garlic and oil, the possibilities are endless)

 

Directions:

Combine sugar, warm water, and yeast in a glass and let sit until foamy (about 5 mins) - if your mixture doesn't get foamy, your water is too hot or too cold. Or your yeast is dead. So sorry for your loss. Go get some more yeast and try again.

In the bowl of a stand mixer add flour, oil, and salt

Dump in the yeast mixture and mix using the hook attachment (or use your hands if you don't have a mixer) just until the dough pulls away from the sides of the bowl

If your dough is too dry - add more warm water, if it's too wet - add more flour

Place the dough ball in a lightly oiled bowl, cover, and rest for 30 minutes

Preheat oven to 450°F

Split your dough in half - this recipe makes 2 calzones

On a piece of parchment, roll the dough into an oval using a flour dusted roller


Arrange your filling on half of the dough, leaving about a 1" border so you can seal your calzone

Carefully, using the parchment for assistance, fold the naked side of your dough over the filling, matching up the edges as best as you can

Pinch the edges together creating a seal around your filling

Create 3 slits in the top of your calzone using a sharp knife so the steam can escape

Brush the entire thing with olive oil and sprinkle on seasoning & parm

Bake on a parchment lined baking pan for 20-25 minutes or until golden brown


Let stand 10 minutes before serving

It will be lava hot right out of the oven - trust me - LEARN FROM MY MISTAKES!

Serve with dipping sauce!

 

Vicious Variations:

Instead of using the usual pizza suspects, try stuffing this with broccoli and your fav vegan chedda - Golden Goop of the Gods!
