Ingredients:
For the crust: 1 15 oz. container of vegan butter (I use Soy Free Earth Balance) 3/4 cup sugar 1/2 cup brown sugar 2 tsp vanilla extract 3 1/2 cups GF AP flour (I use Pamela's Artisan Blend) 1 1/2 tsp salt 1/2 cup rolled oats 1 tsp ground cinnamon
Filling:
8 medium apples (or 6 large ones), peeled, halved, & sliced 2 tbsp lemon juice 1/4 cup sugar 1 tsp ground cinnamon 1/8 tsp ground nutmeg
1/8 tsp ground cloves 4 tbsp vegan butter
Directions:
Make the crust & crumble:
Add butter, sugars, and vanilla in the bowl of an electric mixer with the paddle attachment and beat until light and creamy
Add the salt & flour and beat until just combined
Remove 2/3 of the dough from the bowl and plop it on a half sheet pan (12 x 17, 13 x 18, whatever) lined with parchment paper
Press lightly to form a crust that covers the bottom of the pan and a little up the sides
Refrigerate for 20 minutes
While your crust is chillin out, put the bowl with the remaining dough back on the mixer
Add the oats, and cinnamon, and mix to combine
Set aside
Preheat oven to 375°F
Bake for 20ish minutes, until the crust is golden brown
Set aside to cool
Filling prep:
Combine apples, lemon juice, sugar, cinnamon, nutmeg, cloves, and butter in a large pot
Simmer over medium to medium-low heat, stirring often, for 15 minutes, until the apples are tender and the liquid has mostly evaporated
Reduce the oven to 350°F
Assemble the pie:
Spread the apples evenly over the crust, leaving a small border
Crumble the remaining dough with your fingers over the top of the apples (you'll want some filling peeking out)
Bake for 30ish minutes, until the topping is golden brown
Cut into squares and serve with vegan vanilla ice cream (So Delicious brand Vanilla Cashew holy crap yum) or coconut cream!
Vicious Variations:
Sub any fruit you like instead of apples: I've done pear, blueberry, strawberry, and peach!
