Easy Eggless Omelette


A quick breakfast to impress your taste buds, or someone else. GF. V. SF. NF.


Ingredients:

1 1/2 cups chickpea (garbanzo bean) flour (I use Authentic Foods Brand)

2 tsp salt

1 tsp pep

1/4 cup nutritional yeast

1 tsp smoked paprika

1/2 tsp onion powder

1/2 tsp turmeric

2 tsp ground chia seeds (or ground flax)

1 1/2 cup water

2 chopped scallions (reserve a small handful for garnish)

1 cup diced bell pepper

2 cups chopped spinach

Oil for frying

 

Directions:

Mix together in a large bowl all of the dry ingredients

Whisk in water

Fold in veggies

You should have a consistency somewhere between pancake batter and whisked eggs


Lightly oil and preheat a non-stick pan or griddle to medium heat

Pour a portion of the batter on the pan to your desired size

Cook 3-5 minutes on each side, or until golden brown (don't overcook or it will end up more like a pancake)


Garnish with remaining green onions, a pinch of salt, and some sesame seeds

I made a spicy gochujang aioli to go with mine!

Makes 3 huge or 6 small omelettes

 

Vicious Variations:

This is the perfect "clean out the fridge" breakfast. Use whatever veggies you have in place of spinach, onion, and peppers!

This is also killer just plain garnished with some sliced avocado
