Spinach Citrus Salad


Light, Refreshing, & Damn Tasty.

GF. V. SF. NF.


Ingredients:

3 cups fresh spinach

1 cara cara orange

1 blood orange

1 small pink lemon (a small yella lemon works fine too)

1 cup mild microgreens

1 tbsp olive oil

2 tbsp red wine vinegar

1 tsp poppy seeds

Flake salt & black pep for sprinklin

 

Directions:

On your serving tray, or in individual servings - lay down ya spinach

Peel & slice oranges & lemon into rounds, reserving the butt ends to squeeze into your dressing

Arrange orange & lemon slices on the spinach for maximum prettiness

Sprinkle on the microgreens (they look so fancy)

In a small jar, squeeze the butt ends of your oranges & lemon (hopefully creating about 2 tbsp of juice - if it's not enough, squeeze some more or add some oj)

Add to your juice: olive oil, red wine vin, and poppy seeds & give it a whisk or shake

Drizzle the dressing over the orange slices on the salad and finish with salt & pep

Makes 2 servings for the mega hungry or 4 normal people servings

 

Vicious Variations:

Use any variety of citrus you like!

Grapefruit, navel oranges, tangerines, limes. So many possibilities!

Add some crushed pistachios for a crunchy addition
