4 Ingredient Vegan Ricotta

    Ready for grandma's lasagne in 5 minutes

    GF. V. SF.


    2 cups slivered almonds (pre-soak overnight if you aren't using a Vitamix or high power blender)

    2 tsp salt

    2 tbsp lemon juice

    1 cup water


    Toss everything in the blender

    If the blades aren't moving, add another splash of water to get things going

    That's really it!

    Store in an airtight container in the refrigerator until you're ready to use

    Try it on toast!

    Makes about 32 oz. - just enough for a full pan of lasagne

    Vicious Variations:

    Add in a handful of fresh spinach for a bright green ricotta

    Swap the water for broth for a really rich & flavorful ricotta
