Everything should taste like a campfire.
GF. V. SF. Can be easily made NF.
Ingredients:
1 1/4 cup sugar
1 tsp molasses
1/2 cup vegan butter (I use soy free Earth Balance)
1 tsp vanilla extract
1/4 cup non-dairy milk (I use unsweetened almond milk)
1 tbsp ground chia seeds
1 1/2 cups GF AP flour (I use Pamela's Artisan Blend)
1/2 tsp baking soda
1 tsp smoked salt (applewood is my favorite)
1 cup vegan chocolate chips (I use Enjoy Life Semi-Sweet Mini Chips)
Directions:
Preheat oven to 350°
Line 2 cookie sheets with parchment
In a big bowl, mix the sugar, molasses, butter, vanilla, milk, and chia seeds until creamy and smooth
Add in flour, baking soda, and smoked salt and mix until just combined - do not over mix!
Gently fold in chocolate chips until evenly distributed throughout the dough
Scoop dough balls onto parchment lined cookie sheets about 3" apart
Sprinkle with smoked salt before baking
Bake 12-14 minutes
Wait 5 minutes before transferring cookies to a paper bag to cool
Makes about 15 big cookies
Vicious Variations:
Add in some roasted walnuts for a crunchy texture
Not a fan of smoky flavor? Sub sea salt or Himalayan pink salt for a more classic flavor
